Elderberry Fool (recipe)

Delicious elderberries in the autumn.

Wondering how to make the most of the elderberries that hang in abundance in the autumn? Well here’s a luscious dessert recipe that’s sure to impress guests at your next dinner party.

 

Ingredients:

250gm ripe Elderberries
250ml water
50gm sugar
Juice of 1 lemon
Juice of 1 orange
300ml double cream
Spigs of elderberries for garnish

 

Method:

  1. With a fork remove the berries from the stalk, place into a saucepan along with the water and lemon juice, simmer over a low heat until soft (approx. 10 minutes).

  2. Sieve carefully, discard the pips, and return to saucepan, along with the sugar and orange juice. Bring gently to the boil and reduce slightly to syrupy consistency.

  3. Remove from the heat and cool.

  4. Then whisk in the double cream until thick.

  5. Pile into glasses, garnish with a small spring of berries.

  6. Place in fridge until ready to serve.
